Green Salad with Magical Rub-seasoned Shrimp, Fresh Mozzarella, and Asparagus

Salad base

  • 1 cup or so of mixed greens
  • 1 cup red cabbage
  • ½ cup flat-leaf parsley
  • ½ cup coriander

Salad dressing

  • 1 TBSP olive oil
  • 1 TBSP sesame oil
  • 1 TBSP Bretelles golden maple syrup
  • 1 TSP tahini
  • 1 TSP rice vinegar
  • 1 TSP lemon juice
  • Grated ginger, to taste
  • Salt and pepper


  • 2 TBSP butter
  • 10 to 16 shrimp
  • 1 TBSP Bretelles Magical Rub
  • 8 to 10 pieces of asparagus
  • 6 balls of fresh mozzarella
  • 2 sprigs of chives


  1. Roughly chop herbs and finely chop red cabbage (grating will remove crunchy texture) and mix in a salad bowl with mixed greens.
  2. Make dressing and set aside.
  3. Melt 1 TBSP butter in a pan and add shrimp. Season generously with Magical Rub (about 1 TBSP) and sear on medium-high heat for about 4 minutes. Remove from heat when caramelized, then transfer to a bowl. Using the same pan, sauté asparagus in remaining butter over medium heat for 4 minutes.
  4. Slice fresh mozzarella, and finely chop chives.
  5. Divide salad mix onto 2 plates and top with sliced mozzarella, asparagus, and shrimp. Drizzle with dressing then garnish with chives and freshly grated pepper.
  6. Serve with slice of lemon.
